In South Africa, pap is one of the staple foods, typically served with a tomato sauce. Inspired by Italian arancini, we’ve given this dish a twist. In Italy, leftover risotto rice is used to make small balls, usually filled with cheese, and then coated in breadcrumbs and fried until crispy. We followed a similar process, but instead of rice, we used pap and filled it with frikadelle (special ground meat). Now, are you ready to taste these delicious pap arancini balls?

Ingredients for the Tomato Sauce:

  • 2 white onions, chopped
  • 30 ml olive oil
  • 2 garlic cloves, chopped
  • 30 ml brown sugar
  • 5 ml smoked paprika
  • 2.5 ml sea salt
  • 30 ml red wine vinegar
  • 2.5 ml chili seasoning
  • 80 g golden raisins

Peri-peri seasoning is a popular and flavorful spice from South African cuisine, particularly used in grilled dishes and chicken.

Pap Arancini Recipe with Tomato Sauce

  • Preparation time: 120 minutes
  • Cooking time: 60 minutes

Instructions:

  1. First, prepare the pap. Bring water to a boil in a large pot. Slowly stir in the cornmeal and salt. Then, reduce the heat and cover the pot. Allow it to cook for about 30 minutes until the pap is fully cooked, and let it cool to room temperature.

  2. Remove the boere sausage from its casing and shape it into small balls. Fry them in a little oil until fully cooked, then set them aside to cool.

  3. To make the sauce, sauté the onions in olive oil over low heat until soft, making sure not to brown them. Add the garlic and cook for a few more minutes. Add the remaining ingredients, except for the raisins, and let it simmer for 10 minutes. Then add the raisins and cook for another 5 minutes.

  4. To prepare the arancini, take 15 ml of cold pap, shape it by hand, and place a boere frikadelle inside. Shape the pap to fully cover the frikadelle.

  5. Roll the balls in beaten egg, then in breadcrumbs, and fry them in hot oil until golden and crispy.

  6. Serve the arancini balls immediately with the tomato sauce.
