BEEF STEW WITH DOMBOLO

Beef stew with dambulo bread is a combination of a rich traditional dish with modern flavors, enhanced by the special seasoning from sisotti, giving it even more depth and variety.

Beef stew is a comforting and delicious meal that’s always a hit. This time, instead of serving it with mashed potatoes, we’re drawing inspiration from our own culinary heritage and pairing it with dambulo. If you’re unfamiliar with dambulo, it’s a type of bread that is steamed rather than baked. You can make one large loaf and slice it, but we decided to go for smaller, individual dambulo pieces. For extra flavor, instead of regular salt, we used Mediterranean-style sisotti seasoning.

Recipe for Beef Stew with Dambulo Bread

For the gremolata:

  • 45 ml chopped parsley
  • Zest of one lemon
  • 1 finely minced garlic clove

For the Dambulo bread:

  • 680 grams flour
  • 450 ml lukewarm water
  • 10 grams dry yeast
  • 30 ml Mediterranean-style sisotti seasoning
  • 10 ml vegetable oil

Start by preparing the stew. Heat oil in a large pot and brown the beef. Add the onions, celery, and bacon, and cook for about five minutes. Then add the garlic and cook for another two minutes. Return the beef and its juices to the pot. Add tomatoes, broth, carrots, black pepper, salt, and bay leaves. Let it simmer over low heat for about 60 to 90 minutes.

The Mediterranean seasoning, with its mix of olives, garlic, lemon, and aromatic herbs, brings a fresh, fragrant touch to the stew, offering a delightful and unique twist on a traditional dish.

While the stew is cooking, you can prepare the dambulo bread. In a large bowl, mix the flour, yeast, and seasoning. Gradually add the lukewarm water and knead the dough. Place the dough in a lightly oiled bowl and let it rest for 30 to 60 minutes, or until it doubles in size. Once ready, divide the dough into small pieces and shape them into small balls. Place the dough balls in a steamer and steam for about 25 to 35 minutes.

Finally, serve the beef stew in a dish, topped with gremolata and fresh dambulo bread.
